Traditional Macaroons

TRADITIONAL MACAROON
makes about 30 cookies


4               Egg whites (room temperature)
1               Vanilla Bean (seeds only) or 1 tsp Vanilla Extract
1/8 tsp   Cream of Tartar

1 cup       Sucanat

3 cups     Coconut, shredded
1 cup       Pecans, chopped
2 Tbs       Spelt Flour
pinch      Salt


Preheat oven to 300 degrees F.  Grease and flour a cookie sheet.
To remove the seeds from a vanilla bean, slice the pod lengthwise.  Then use the flat side of the knife to scrape the seeds out.  Put egg whites, vanilla, and cream of tartar in bowl and beat until soft peaks form.  Slowly add sucanat and continue to beat until stiff.  Mix together coconut, pecans, flour and salt in a bowl and fold into egg whites.  Use a 1/8 cup measure to drop batter onto cookie sheet.  Bake for 18-20 minutes or until slightly golden.


VARIATIONS:

  • Add 1 cup chocolate chips or let cool and then dip them in melted chocolate
  • Use macadamia nuts instead of pecans
  • Instead of pecans put in 1/4 tsp almond extract
  • Add another cup (4 cups total) of coconut for extra chewy cookies
  • Add 1 cup chopped dates and half the sugar

1 cookie = 22 grams & 110 calories
